I do most of the cooking in the house, but I tend to cook things that I know will turn out well and save the experimenting for myself. So when my wife is out for the evening, it’s time to get creative. With only one yak patty left in the freezer, I decided to make a serious burger out of it. Never had yak before? It’s time to try it. Yak is extremely low in fat (leaner than beef, buffalo and chicken) but you’d never know it. It’s as moist and juicy as a regular-fat burger and while it has a strong beef flavor, there’s no gamey taste at all. I would even go as far as to say it’s the “beefiest” burger I’ve ever tasted. Plus, it’s fun to say the name. Find a game meat store near you and get some Yak burgers. Once you go Yak, you never go back.
1 Yak patty
1 oz Aged Cheddar (Cabot cloth-bound is the best)
1 Egg
1/4 Avocado, sliced
1 Bun (if you must)
Ketchup, for dipping
Directions:
1. Salt and pepper the yak burger on both sides while you preheat the grill. Place a small cast-iron skillet on the grill to preheat if you want to cook the egg on the grill too.
2. Once the grill is hot, place the burger on the grill. After 3 minutes flip the burger and put the cheese on top, then crack the egg into the skillet (or cook it on the stove). After 2-3 minutes, everything should be ready.
3. Assemble the burger like you see above. Serve with baked fries (Korean yams are my favorite for this).
