The weather is perfect and calls for eating dinner outside. If you’re looking for an excellent appetizer for guests or a light dinner for 2, then look no further. To get the full enjoyment out of it, make sure to follow these guidelines: First, get a high-quality cut of tuna and the freshest ingredients you can. Next, since you’re not going to eat it straight with a spoon, make a batch (or 2) of homemade tortilla chips. Last but not least, be sure to serve it with a cold beer.

Directions:

Add all ingredients, except the avocado, to a bowl and mix well. Then add the avocado and toss lightly. Chill for 30 minutes. Serve with homemade tortilla chips.

The ceviche sounds fresh, tasty, and healthy! Great easy recipe.

I can’t wait to read about your peanut butter dessert. Oh, and I am in full support of eating a serving of peanut butter every day of this month – in addition to the other 11 months :).

Yes, it’s definitely enough for 4 people as an appetizer. It was perfect for 2 people as a main course with some guacamole on the side.
