Fall is here and pumpkin season is in full swing! Hunt down and stock up on canned pumpkin. It may be a bit too cold for Pumpkin Pie Ice Cream so here’s a warm, satisfying bowl of pumpkin oatmeal instead. Compared to oatmeal made with just milk or water, pumpkin puree adds a wonderful creamy texture and subtle earthy flavor. This recipe is a tasty way to get your whole grains, healthy fats, dairy. fruit and vegetables into your breakfast. Elisabeth gave a wide-eyed look of satisfaction after one bite and I was amazed at how good this turned out. This is quite possibly the Peanut Butter Boy’s new favorite breakfast and perfect for the morning after Thanksgiving.

Ingredients:Print

1/3 cup instant oats
1/2 cup pumpkin puree
1/2 cup skim or soy milk
1/4 cup fresh cranberries, rinsed (optional)
1/2 ripe banana
2 Tbsp peanut butter
1/2 tsp cinnamon (8 shakes)
pinch of nutmeg (2 shakes)
pinch of ground ginger (2 shakes)
2-4 tsp maple syrup, to taste

Directions:

1. Mix the oats, milk, pumpkin puree and cranberries (if using) in a medium microwave-safe bowl until pumpkin is dissolved. Microwave on high for 2 minutes.

2. Remove from the microwave and slice the 1/2 banana into the bowl. Microwave on high for an additional 1-1/2 to 2 minutes. Watch closely so the oatmeal doesn’t cook over the edge of the bowl.

3. Remove from the microwave and stir in the peanut butter, cinnamon, pumpkin pie spice and maple syrup. Use the back of the spoon to mash the bananas and mix well. The more maple syrup you use, the more it will resemble a classic pumpkin pie. The final result:

    It’s never too cold for ice cream if you ask me, but hey oatmeal is great too! O think it’s a great idea to put pumpkin puree in there. And it’s not only pumpkin oatmeal, it’s pumpkin pie! Gotta love it!

    nice one nick! I’ve actually done pumpkin oatmeal for a while but have never added banana or pb. If you ever want to mix it up, I find sunflower seeds taste really good in pumpkin oatmeal.

  8. This morning, as I was driving home from an all together too early doctor appointment, I decided to stop off at whole foods and get some GF oats.

    Normally, I scan through emails and blogs as I eat breakfast, but today I thought I’d enjoy the oats in solitude – and wouldn’t you know it, had I looked I could’ve had pumpkin pie oatmeal! I almost put pumpkin pie spice in, almost, but i settled for cinnamon and strawberries…and no peanut butter in sight. Clearly, this is what I get for not checking your site more regularly…ah well, I know what i’m having for breakfast tomorrow.

    Also, I made the pumpkin pie ice cream – it turned out well, but getting the chunks of frozen peach to blend took like 20 minutes. Maybe I should’ve sliced it up in smaller pieces before freezing it. Anyway, it was quite good and the cinnamon snaps made it even better! (in answer to your question on my blog, I don’t remember non-GF cinnamon snaps, but my mother swears the mi-del ones are as good as the real thing.)

    Dana, By the way, I think you might need a new blender! It shouldn’t take that long! I have a cheapo blender and use peaches cut into quarters and it works fine! Takes a few scoop downs with a spoon, but it works itself out within a couple minutes.

    Yum! I eat oatmeal almost every day and this is my basic recipe (spices, banana, PB, maple syrup or honey) minus the pumpkin. I actually saw a recipe for pumpkin oatmeal recently and tried to adapt it using sweet potato…ugh it was terrible, mostly because of the potatoey texture. Pumpkin would be much smoother. I guess it’s worth it to go track some down. Your photo is very persuasive :)

    I always put peanut butter in my oatmeal, especially if we are camping. Best satisfying meal ever. However, the addition of the pumpkin and cinnamon makes it even more amazing. Why did I not think of this sooner? Thank you for bringing this to attention. You rock.

      Haha, thanks Lu! Add the pumpkin, cinnamon and a dash of maple syrup and you will be amazed. I even blended this oatmeal once and baked it in a pie crust! The only problem was it didn’t bake up quite the same (despite adding 1 egg). I’ll have to experiment more with it this year.
