Done in 60 Seconds: Raspberry Truffle Coffee vegetarian snack peanut butterless done in 60 seconds dessert breakfast

Hey everyone – long time, no eats! It’s been a while since my last recipe but you’re all in for a treat. I’m developing a new recipe series called Express Eats that are designed to take literally 1 minute or less. The idea is based on the fact that not everyone has the time (or desire) to make a fancy 3-course dinner or a rockin’ bowl of oatmeal every morning. So I’ve come up with a few super quick recipes to add a little spice to your day. This can be anything from a quick and innovative snack to a twist on an morning staple (like this coffee recipe). But I need some feedback. What do you think – is this series a good idea or not? And do you like the title “Express Eats” or can you think of something better? Other names I was contemplating: 60-Second Eats, Minute to Make it, Done in 60 Seconds. Suggestions?

Ingredients:Done in 60 Seconds: Raspberry Truffle Coffee vegetarian snack peanut butterless done in 60 seconds dessert breakfast Print

1-2 Tbsp unsweetened cocoa powder (with or without alkali is fine)
2 tsp Da Vinci Raspberry Syrup (or any other flavor)
8-10 oz brewed coffee
milk or nonfat milk powder

*Note: If you don’t have these syrups, simply substitute 1 tsp sugar + 2 tsp water for a Dark Chocolate Truffle Coffee.

Directions:

1. Place the cocoa powder in the bottom of a mug and add the syrup (or sugar and water). Mix with a spoon until a paste is formed, adding a few drops of coffee, as needed, to help form the paste. Don’t add too much liquid at this stage or it will be difficult to dissolve the cocoa. The resulting paste should be silky smooth like the center of a chocolate truffle. It should look like this:

2. Pour in the coffee and add milk powder (I use about 2T) or regular milk to thicken. Stir with a spoon until the paste has dissolved into the coffee and enjoy! You may need to stir every few sips to prevent the chocolate from settling but it’s well worth it for this rich chocolately mug of coffee!

    Novel idea! Who doesn’t have 60 seconds to make a treat or nosh. “Done in 60 Seconds” caught my eye. I like it.Looking forward to a few more “quick” ideas. Certainly one of your first posts-The Peanut Butter Hotdog- would fall into this category!

      I like Done in 60 Seconds to. It reminds me of “Gone in 60 Seconds” which is one of my favorite movies!

    On Rachael Ray’s talk show, I’ve seen her have a few people on and do a 1 minute recipe showdown before. I don’t remember what she calls it. I like all your title options. Done in 60 seconds is a fun one. Probably the only thing I can make in 1 minutes is a pb & honey sandwich! ;)

      Too many options, I can’t decide! I want the title to be good but also as short as possible so it’s not too cumbersome (and fits in the title at the top). Decisions, decisions….

    -Minute Made
    -1 Minute Minis
    -1 Minute Makeovers
    -Quick Quisine
    -1 and Done
    -Fast and Fabulous
    -Fix me in Sixty…seconds

    I’m afraid that is the best I have pre-coffee…perhaps post-coffee too.

    call me boring, but I really like “1 minute recipes” because it is what it is, literally

    made a peanut butter version of this this morning with peanut flour, dutch cocoa powder, stevia and soy milk as my add-ins to my coffee :)

      Nice, I did the exact same thing 2 days ago. I need to experiment a few more times to get the right ratio’s but I think it’s a winner-in-the-making!
