As good as this pie looks I can’t take credit for it. Shelby from Beans in my Brownies? submitted this outstanding recipe for a quick and easy dessert. The name of her blog reminds me of another dessert I desperately need to try, bean brownies. I’m hoping to find a good from-scratch recipe to turn into peanut butter bean brownies. I’m happy to share this recipe with you since I don’t often make dessert and I know that many people out there love peanut butter based desserts. Alas, that will be my New Year’s resolution – make more dessert! As for this one, if you use a few of my suggested substitutions this dessert ain’t bad for you at all. And if you have a recipe to share, click here to submit it for publishing on The Peanut Butter Boy!

1 cup (1/2 jar) chunky peanut butter
2 Tbsp butter
1 cup dark chocolate chips
1 (8oz) tub of nonfat whipped topping
1 (8oz) package low fat cream cheese, whipped
1 thick pie crust
powdered sugar (to your liking)
Reese’s peanut butter cups (optional)

1. Combine peanut butter, cool whip, and cream cheese with an electric mixer or wooden spoon. Taste and add powdered sugar, 1/4 cup at a time, to your liking. Then melt the butter and chocolate chips in a sauce pan. After you melt the chocolate, spread it on the bottom and sides of the pie crust and place in freezer until the chocolate is hardened. Then put the peanut butter mixture in the pie and place in fridge until it has set. If you have any left over chocolate, drizzle it over the top of your pie and make a cool design with it. Feel free to crush Reese’s cups on top of the pie.

Wow, that looks absolutely amazing! If you want to try bean brownies, I’ve made these before, and they’re pretty tasty:

For your brownie recipe, for Christmas I made this one and did the alterations I noted on the bottom for a peanut butter version and was very happy with that. I’m sure you can take this and figure out how to make it a lot more peanut buttery

    Awesome, Nick!
I posted a bean brownie recipe last year, but it didn’t have pb. Did you see that one? You just replace mashed beans for the fat.

I was thinking I used a boxed brownie mix, but I didn’t. Here’s the link.
The pie looks de-lish! And I think you’ve made an awesome resolution! ;)

Yes! I do remember that one. I remember thinking how I would love to take a batch of those brownies and hide in the bed like your boys did! The problem is I see so many good looking recipes for the brownies but can never settle on one. I need to just do it!

I 100% knew you would approve of my resolution =)

It reminds me of the older photo on your blog that used to be your title. Yours still won hands down although I forget what it was now….

  5. Delicious and Easy! I can’t wait to try this :)

THanks for sharing another great peanut butter recipe, even though it was from Shelby! looks like a bed I could sleep in! :) well would be rocky, but I’d nibble it until it’d be gone! :)

WOW! Easy and delicious? Love it!!!

Out of curiosity, can I ask why you eliminated the powdered sugar that was listed in the original recipe? Did you try making it and this way or was better, or…? Haha just wondering because I want to make this and want to do it in the best way possible, of course.

    • Nick says:

Are you referring to the original recipe on Shelby’s site? She actually forget to add the sugar to the original recipe but said to add to your liking. I forgot to update mine but did so now! This is the best part though, you get to taste the batter and add sugar until it reaches your liking!
