Peanut Butter and Chocolate Pie


As good as this pie looks I can’t take credit for it. Shelby from Beans in my Brownies? submitted this outstanding recipe for a quick and easy dessert. The name of her blog reminds me of another dessert I desperately need to try, bean brownies. I’m hoping to find a good from-scratch recipe to turn into peanut butter bean brownies. I’m happy to share this recipe with you since I don’t often make dessert and I know that many people out there love peanut butter based desserts. Alas, that will be my New Year’s resolution – make more dessert! As for this one, if you use a few of my suggested substitutions this dessert ain’t bad for you at all. Ingredients:

1 cup (1/2 jar) chunky peanut butter
2 Tbsp butter
1 cup dark chocolate chips
1 (8oz) tub of nonfat whipped topping
1 (8oz) package low fat cream cheese, whipped
1 thick pie crust
powdered sugar (to your liking)
Reese’s peanut butter cups (optional)

Directions:

1. Combine peanut butter, cool whip, and cream cheese with an electric mixer or wooden spoon. Taste and add powdered sugar, 1/4 cup at a time, to your liking. Then melt the butter and chocolate chips in a sauce pan. After you melt the chocolate, spread it on the bottom and sides of the pie crust and place in freezer until the chocolate is hardened. Then put the peanut butter mixture in the pie and place in fridge until it has set. If you have any left over chocolate, drizzle it over the top of your pie and make a cool design with it. Feel free to crush Reese’s cups on top of the pie.
