Happy National Peanut Butter Day! If you didn’t know, Jan 24th is National Peanut Butter Day – the most joyous holiday of the year. To make the most of this holiday, make sure you have peanut butter with every meal and for every snack. Here’s a great way to make it for dinner. I first made this dish a long time ago for the Sacramento food blogger potluck in 2008, hosted by Elise from Simply Recipes. The potluck was a lot of fun and it was great to meet other food aficionados. And while it’s generally not a good idea to make a brand new dish for a group of strangers, this one looked too good to pass up. The dish was such a success and I’ve made it several times since. The seasonings are perfect in these meatballs and the sweet/salty peanut sauce add the perfect touch. You can serve these up two different ways: with toothpicks for dipping or served over rice with peanut sauce poured on top.

Peanut Dipping Sauce:

Instructions:

1. Combine all meatball ingredients in a bowl and mix well. Shape into 1″ meatballs. For oven: Bake in a nonstick baking dish at 375 degrees for 30 minutes, stirring them half way through. For microwave: Cook on high for 4 minutes, stir, and cook on high for an additional 4 minutes. Makes about 30 meatballs.

2. Whisk together all the sauce ingredients except for the milk. Once mixed together well, whisk in the milk. Microwave or heat in a saucepan until warm.

3. Stick toothpicks in the meatballs use the dip as an appetizer or serve the meatballs over rice and cover with peanut sauce.

Every time I make this I modify the sauce. Being the peanut butter addict that I am, I’m constantly on the quest for the ultimate peanut sauce and am never satisfied, but this is one of the best so far. Do you have the ultimate peanut sauce recipe?

    Zesty, Thanks, I’ve been meaning to give them a try in pasta sauce but have yet to do so. These have the perfect consistency: savoy, crispy and tender. Once dipped in the sweet/salty peanut sauce they are divine!

    ChocolateCoveredVegan, I’m not a fan of the bottled ones either, but I did find an incredible one in a packet called A Taste of Thai. I make it with vanilla soymilk and it is out of this world. My goal is to make a peanut sauce that is superior.

    Erin, I’ve recently got into the ground pork (which is essentially ground pork tenderloin). It’s really lean and super juicy and delicious. You must share your recipe! Or do some kind of comparison… I must have the ultimate!

    ttfn300, You’re right, that would be delicious. I made that peanut butter flavor once but I rarely used it so I haven’t made it since. It’s real simple to make, I should share the recipe.

    Fearless Kitchen (Jessica), No problem at all! I’d love to see your take on it, what did you end up using? Beef, turkey or pork? Sorry I didn’t get back to you on that. I think beef or turkey would work just as well. But if you were to use the lean ground turkey breast then I would have suggested to add some extra liquid to ensure that it doesn’t dry up. Let me know when you’ve posted your version!

  29. Thanks! The post will probably show up later this week. I wound up using ground turkey patties that ceased to be patties, they were a mix of light and dark meat that worked pretty well. They didn’t turn out to be too dry, and they had a good flavor that wasn’t too far off.

    ALWAYS RUN INTO THIS CONFUSION ON WHAT “CHILI POWDER” IS. GROUND CHILI PEPPERS OR THAT CONCOCTION CALLED CHILI POWDER THAT IS USED IN BBQ?

      Dale, I feel your pain! “Chili powder” will always refer to a concoction that is a mixture of spices/seasonings (and often used in BBQ). And depending on the brand you buy, all “chili powder” will be slightly different.

      Pure ground chili peppers is called “ground red pepper” or “cayenne pepper” since it’s usually made from dried and ground cayenne peppers. Hope that helps!

    Hmm, well you could use Tamari sauce or trying making a soy sauce substitute (here: http://www.food.com/recipe/soy-sauce-substitute-216380 )

    Hey, can you sub peanut flour for the oat flour in the meatballs?

      Hmm…I don’t see why not. The only thing you may need to add is 1-2 Tbsp of water if the mixture feels a little too sticky/dry. Otherwise it should work perfectly!
