Indonesian Meatballs with Peanut Sauce


Happy National Peanut Butter Day! If you didn’t know, Jan 24th is National Peanut Butter Day – the most joyous holiday of the year. To make the most of this holiday, make sure you have peanut butter with every meal and for every snack. Here’s a great way to make it for dinner. I first made this dish a long time ago for the Sacramento food blogger potluck in 2008, hosted by Elise from Simply Recipes. The potluck was a lot of fun and it was great to meet other food aficionados. And while it’s generally not a good idea to make a brand new dish for a group of strangers, this one looked too good to pass up. The dish was such a success and I’ve made it several times since. The seasonings are perfect in these meatballs and the sweet/salty peanut sauce add the perfect touch. You can serve these up two different ways: with toothpicks for dipping or served over rice with peanut sauce poured on top.

Instructions:

1. Combine all meatball ingredients in a bowl and mix well. Shape into 1″ meatballs. For oven: Bake in a nonstick baking dish at 375 degrees for 30 minutes, stirring them half way through. For microwave: Cook on high for 4 minutes, stir, and cook on high for an additional 4 minutes. Makes about 30 meatballs.

2. Whisk together all the sauce ingredients except for the milk. Once mixed together well, whisk in the milk. Microwave or heat in a saucepan until warm.

3. Stick toothpicks in the meatballs use the dip as an appetizer or serve the meatballs over rice and cover with peanut sauce.

Every time I make this I modify the sauce. Being the peanut butter addict that I am, I’m constantly on the quest for the ultimate peanut sauce and am never satisfied, but this is one of the best so far. Do you have the ultimate peanut sauce recipe?
