Indonesian Meatballs with Peanut Sauce

Ingredients:

Indonesian Pork Meatballs:
1lb 95% lean ground pork (ground pork tenderloin)
2T oat flour
1/4 cup green onions, finely chopped
2t cumin
1/2t salt
1/4t ground allspice
1/4t ground coriander
1/8t black pepper
1 egg white (2T egg substitute)

Peanut Dipping Sauce:
1/2 cup creamy natural peanut butter w/ salt
1T soy sauce
1T lime or lemon juice
1T honey
1T fresh grated ginger or 2t ground ginger
1T chili powder
1/4 cup unsalted peanuts, chopped
1/2 cup skim, coconut or soy milk

Instructions:

1. Combine all meatball ingredients in a bowl and mix well. Shape into 1″ meatballs. For oven: Bake in a nonstick baking dish at 375 degrees for 30 minutes, stirring them around half way through. For microwave: Cook on high for 4 minutes, stir, and cook on high for an additional 4 minutes. Makes about 30 meatballs.

2. Whisk together all the sauce ingredients except for the milk. Once mixed together well, whisk in the milk. Microwave or heat in a saucepan until warm.

3. Stick toothpicks in the meatballs use the dip as an appetizer or serve the meatballs over brown rice and cover with peanut sauce.
