My life is an enigma: Peanut butter is my favorite food but Mexican and Japanese are my favorite cuisines. I’ve been to plenty of Mexican restaurants and have never seen peanut butter in any dish, although I’ve managed to make it happen. While it’s tough to incorporate peanut butter into Mexican food, Japanese cuisine is even more difficult. I have yet to find a Japanese dish that contains peanut butter other than a special sushi roll that had crushed peanuts on top, which is far from authentic. The other problem is that I never prepare Japanese cuisine and thus there’s no chance to inject some peanut butter. Side note: I find it strange that I’d never consume raw fish I bought at the store, but I completely trust restaurants to do it for me. Raw fish aside, here’s a great vegetarian sushi that includes peanut butter! I thought of it a while ago while devising alternative ways to make a Peanut Butter Hot Dog. Have kids? Just think how confused, then excited they’ll be to get this for lunch!

Ingredients:Print

1 (8″) soft whole wheat tortilla
2T creamy natural peanut butter
1 banana
1T currants or raisins
cinnamon
honey or agave

Instructions:

1. Spread a thin layer of peanut butter across the entire tortilla, leaving about 1/4″ gap at the edge. Shake cinnamon on top of the peanut butter. Bend/mush the banana in an attempt to straighten it and place in the middle of the tortilla. Roll up the tortilla tightly and leave seam-side down on the plate.

2. Cut into 8 pieces with a small pairing knife. Drizzle honey across the top in a zig-zag pattern so that some lands on the plate too. Place the currants on top of the roll and shake cinnamon on top.

3. Final and most important step: eat with chopsticks.

Additional Info:

I haven’t done so yet, but I recommend trying it with Dark Chocolate Peanut Butter and replacing the currants with chopped dried cherries.

    i made some dessert sushi for my daughters birthday party last summer, nice touch with the banana. i used rice krispie treats and fruit rollups for the seaweed.

    Peanut Butter and Shrimp Tacos.

    Soft Taco shell
    Grilled Lemon Shrimp
    Peanut Butter
    Shredded lettuce
    Pepper Sauce (to taste)

      No I don’t, but they’re pretty easy to find in the grocery store. If not, a regular white flour tortilla will work just as well!

    I love this idea!! Ive made the pb and banana hot dog whenever we have a cookout. Pb hot dogs=way better than a reg hot dog!! :)
