Apple picking – a common fall activity enjoyed by thousands of people ever year. Yet somehow, for the past 5 years we’ve tried and failed to apple pick. Apple picking is the type of party you don’t want to be fashionably late to, yet we always were – and there were never any apples left. But last year we did it! A successful 26lb haul of fresh picked apples. We tried to remember all the varieties we picked but couldn’t, there were just too many! Enjoy my first apple crisp ever – naturally a peanut butter one!

Ingredients:Print

1/2 cup + 2 Tbsp whole wheat flour (or oat flour, for gluten-free)
3/4 cup rolled oats
1/3 cup brown sugar
1-1/2 tsp ground cinnamon
1/2 tsp nutmeg
pinch of salt
3 Tbsp butter
1/4 cup creamy peanut butter
6-10 apples, cored and sliced

Directions:

1. Place the flour, oats, brown sugar, cinnamon, nutmeg and salt in a large bowl and stir together. Add the butter and peanut butter and cut it in with a knife, then mix with your hands until all the butter and peanut butter is evenly incorporated.

2. Preheat oven to 350 degrees. Place the apples in a deep 9×13 baking dish until the dish is completely full. Top with the crisp mixture to cover the apples. Bake for 35-45 minutes, until apples are very tender and the topping begins to turn a medium-dark brown.

    Never thought of this combo but i have to try it now. I’m stocking up on peanut butter before the pricing changes – ack!!!

      Ugh, don’t get me started on the shortage – I don’t know how I’m going to survive. Second job?

      However, this is the ONLY way to eat apple crisp from now on. It’s delicious.

    What would you think of potentially using a maple PB here? It’s another fall flavor, in my mind, but I’m not sure if that would make the flavor too “busy”…

      Definitely. That would work very well. Other idea: take out 2-3T of brown sugar and add 2-3T of maple syrup! And simply add a few more pinches of oats to compensate for the additional liquid. If you do it, let me know!

        Your variation is probably going to be a bit easier on my wallet. I will probably be giving this a whirl in a couple of weeks, and I will definitely let you know how it turns out.

    Our school always made apple crisp with peanut butter in it, when I was a kid. I never knew it was commonly made without it! So glad I finally found a recipe that sounds “right”! Thanks for sharing!

    Our school always made apple crisp with peanut butter in it (in the 70s and 80s) and I LOVED it!! But it was always served in those little paper cup things, about 1/4 cup worth. Not enough!! Haha! Thanks for the recipe. Looking forward to trying it!
