I often get experimental with peanut butter. Sometimes it works, sometimes it doesn’t. This one did. Don’t get grossed out just yet, all the ingredients aren’t simply mixed together. I developed this while on the hunt for a savory oatmeal after realizing that I’ve only ever made sweet oats. A few bloggers have used eggs in or on their oatmeal before but I went a step further. The different textures of the creamy nutty oats and the crispy egg and cheese pancake make for a wonderful combination. If you still doubt me, read the comments from the daring Peanut Butter & Banana Omelet recipe and you’ll see those readers were pleasantly surprised!

Ingredients:Print

Oats
1/3 cup oats (quick or regular)
3/4 cup skim, soymilk or water
1/2 banana, in 1/8″ slices (optional, for a touch of sweetness)
2T peanut butter

Egg and Cheese Pancake
1 egg (1/4 cup egg substitute)
2T nonfat cheddar cheese
kosher salt and pepper, to taste

Directions:

1. Mix the oats, milk, banana (if using) and peanut butter in a medium bowl and microwave for 2-3 minutes, until thickened to desired consistency.

2. Preheat a small skillet over medium-high heat. Once hot, spray with cooking spray and pour in egg. Add a pinch of salt and pepper, sprinkle cheese on top and cook for about 1-2 minutes or until set. Flip and cook for 30-60 more seconds. Place egg on top of oatmeal.

  4. that’s one heck of a mighty breakfast! i love everything savoury and i think PB gives that extra savoury twist to sweet dishes, and sweet touch to savoury dishes. i simply love it.

  13. Wow…this is too much for a day…first it’s PB in oats…then cheese and egg pancake with oats….I love oats and I definitely have to give this a try.

    Strange as it sounds, I’ve made tofu omlets (well, scrambles at least!) And I may have the courage to try this recipe, with some replacements!
    P.S. What is your all time favorite PB combination or way of eating PB? Mine is probably the classic “elvis”… a pb/banana sammie, maybe drizzled with some 100% maple surup? mmm… =)

    It’s funny that we often think of PB as being a sweet food. When I was living in Australia, and would eat PB & J, they thought that was crazy, because they look at PB as more of a savory food. If I liked eggs, I might try the recipe out.

  25. Totally makes sense. One of my favourite things is grits with white cheddar and an egg on top. This kinda like the same thing except with oatmeal instead of corn.

    I’ve been away from checking blogs for a bit but I finally got the time and was so pleased / hungry to read all of your amazing posts. …It also made me realize I need to replace the jar of peanut butter I finished off yesterday…

    Funnily enough, I just posted on oatmeal myself. As I was munching away I was thinking about the best way to make a savory oatmeal (I’ve done it with GF hot cereal – a combination of rice & sorgum – and found it pairs nicely with eggs and spinach) but am definetly curious about trying yours out!

    I’m on such a “savoury porridge” kick now, so I made this one too! I never cooked my porridge with PB before, I just made regular oats and added a dollop of yoghurt and a teaspoon of PB afterwards. I have to say that PB porridge with an egg on top worked amazingly well (I might skip the banana next time though). I promise I’ll try my best to buy hominy and make your favourite porridge too, but my local shop doesn’t carry it, so I’ll have to look.
