As a just-married man, what’s the first thing I craved? Popsicles. Perhaps my masculinity is already gone, but who doesn’t like a good popsicle? Especially when you find kickass rocket-robot popsicle molds for under $7! Due to my recent Pinterest addiction I found several recipes for avocado ice cream that I needed to try, as well as several popsicle recipes that looked delicious. That led me to find these awesome Robot Spaceman Popsicle Molds in which I decided to make some version of avocado ice cream. I came up with the recipe below, and while the green color may not be entirely appealing, the taste will win you over. The resulting “ice cream” is creamy, yet also a little icy so it holds it shape perfectly in the popsicle mold. For maximum creaminess, lick/eat the popsicle slowly, it will literally melt in your mouth.

Ingredients:Print

1 small ripe avocado (or 3/4 large avocado)
1 medium frozen banana
2 Tbsp peanut butter
1/2 cup vanilla soy milk (or almond)
1 tsp vanilla extract
2 scoops (~1/2 cup) vanilla or chocolate whey protein powder (optional)
honey or agave, to taste*

*Note: I didn’t use any honey or agave because the protein powder I used was sweetened.

Directions:

1. Add all ingredients to a food processor or blender and blend until a fine puree is achieved. Pour into popsicle molds and freeze. To serve, let them sit out for 3-4 minutes or run them under hot water for 1 minute, otherwise it will be impossible to pull them out of the mold.

    Yum! I’ve frozen chocolate avocado pudding before and it was amazing. I think the peanut butter in your recipe might make it better though ;).
