Have you had enough of peanut butter and chocolate? Me neither. While the chocolate is optional, the peanut butter is not. Perhaps this is a little late, but nothing brings in the fall like the end of fig season! If you can still find fresh figs at the store, you must give these a try. You can use a “regular” peanut butter or try a natural peanut butter with no sugar for a salty/sweet treat.

Ingredients:Print

4 fresh figs
2 Tbsp peanut butter
1 Tbsp dark chocolate chips (optional)

Directions:

1. Preheat oven to 350 degrees and place a piece of tinfoil on a baking sheet. Using a small serrated knife (like a steak knife), cut a small opening in the top of each fig and scoop out some of the insides (and eat it!). Then slice of a thin, flat piece of skin along the bottom so the figs can stand on their own. If you’re using chocolate chips, drop a few into each fig. Using a small spoon or knife, fill/stuff the figs with peanut butter until just overflowing. Place in the oven for 10-12 minutes, until hot and bubbly. Remove from the oven and slice in half. Serve while very warm.

    works with dried figs too (you can find them in snack mix packs from Trader Joe’s, Whole Foods, Walgreens Pharmacy…)
