Peanut Butter Jelly Pork


Elvis was right, peanut butter and pigs go hand in hand. While I’m not a fan of his music except for the song Great Balls of Fire (was that him?), I commend his culinary habits. Elvis was a man who enjoyed his peanut butter in all forms and fashions. The Elvis Burger was one of my first (and best) attempts at combining peanut butter with meat other than with Peanut Sauce. This recipe is another winner for sure. If Elvis were still alive, I’m sure he’d approve. So let’s agree that this recipe is Peanut Butter Boy Tested©, Elvis Approved©.

Ingredients:

1 pork tenderloin, trimmed
3T creamy peanut butter
3T apricot or peach preserves
1T low-sodium soy sauce

Directions:

1. Preheat the oven to 375. Mix the peanut butter, preserves and soy sauce in a small dish until well mixed. Using your hands, spread the mixture all over the tenderloin, then place it in a baking dish and cook in the oven for 45 minutes. Remove, slice and enjoy!
