Peanut Butter is too often associated with sweet dishes ranging from mildly sweet pb&j to super-sweet peanut butter fudge. My job as Peanut Butter Boy is to change that. Here’s a super simple marinade that works on anything. You could put this on cardboard and I’d eat it.
1/4 cup teriyaki sauce (I recommend Kikkoman Teriyaki Sauce, not the Glaze)
2 Tbsp cup creamy natural peanut butter
1 Tbsp Sriracha (to taste)
1 Tbsp olive oil
2 lbs meat or veggies (chicken, pork, beef, turkey, tofu, broccoli, doesn’t matter)
Instructions:
1. Whisk together the peanut butter and 2 Tbsp of teriyaki sauce in a small bowl. Once the peanut butter is incorporated, whisk in the remaining teriyaki sauce and the rest of the ingredients.
2. Place meat in a plastic bag and cover with sauce. Marinate in the refrigerator for 4-6 hours or overnight. Use the leftover marinade to brush on top when grilling.
