I've done the bananas in the scrambled, but havent tried it with peanut butter yet--although it would obviously be awesome. The bananas really give a nice sweetness to an already delicious savory meal

This is definitely an example of “don’t knock it till you’ve tried it!” I used to make something similar – I’d make an “egg pancake” (basically an unfolded omelette) that I sprinkled with cinnamon sugar before flipping it. Then I ate it with sugar-free syrup. Mmm! If I still ate eggs, I’d certainly give it a try with PB :]

It's true, several people have said how much they enjoy this recipe, I'll have to try it with some cinnamon too, thanks! ~ Nick

This was FANTASTIC .... not sure how I ended up at this blog, but so glad I did. Only wished I had some jelly around, as it would have made a great condiment. Try it!

Just made this over the weekend and all I can say is what a treat. Who said omelete's have to be boring. I didn't have any honey so I used some Agave Nectar. Worked out great.
