Gluten Free Peanut Butter Bread

Did you know that inside that jar of peanut butter is an entire loaf of bread? No joke! With just a few simple ingredients you can have an entire loaf of bread in less than an hour. It blew my mind when I found out how easy this was, and bothered me that I hadn’t figured this out sooner. This bread cooks wonderfully, slices perfectly, and even toasts great in the toaster without falling apart. It also freezes and defrosts well, without any noticeable degradation.

Ingredients:

Directions:

1. Preheat oven to 350. In a large bowl, mash the bananas (if using) with a fork, then add the remaining ingredients and mix well. Or mix all ingredients together in a blender.

2. Pour into a 9×5″ silicone loaf pan or well-greased metal one. Bake in a 350 degree oven for 45-50 minutes or until a toothpick inserted into the bread comes out clean.

3. Allow the bread to sit in the pan for about 10 minutes to cool. Remove bread from pan and cool on a rack.

Notes: I’ve made this bread with 0 bananas, 1 banana and 2 bananas. I like it best with 1 or 2 bananas, but you can barely taste the sweetness. The next step is to try 3 or 4 bananas to see how it turns out. I will also investigate using applesauce. I’ll be sure to post the results.
