I like sucralose (Splenda) in my tea and coffee, but yea, I just can't take Stevia. I used to be the same way about foods, I would make super healthy dishes to stay lean and to supplement my workouts with lots of protein, but I soon realized that you can get the best of both worlds. Healthy food can still taste good. Can you make a healthy cupcake? Sort of: http://www.peanutbutterboy.com/double-peanut-butter-banana-cupcakes/

However, I realized that I would make things with half the fat or half the sugar but I'd just eat twice as much because I thought of it as "healthy". Instead I just splurge occasionally and stick to less processed foods and I'm actually in better shape now and healthier than ever before. I still opt for lower fat options but only if it tastes good! Anywho, that's my rant for the day =)

I understand about stevia....my husband doesn't care for it in baked goods. I use it in everything! Flavored stevia drops in my water as well.....it keep me drinking lots of it! I haven't found the cocoa powder to be a problem but I will admit, I would sacrIfice some consistency for a healthier/lower calorie option. My motto is, "Nothing tastes as good, as thin feels!" Don't get me wrong, I've been praised for my "tweaking" of recipes to make them healthy and still taste great BUT I do know that I personally, would sacrifice some taste/consistency to be healthy and fit! :)

Anything should work, you could even use saltine crackers! But you're right, if you start with a coarser ground peanut butter, you probably wouldn't need to add anything else besides sugar.

True, Stevia would work as well, but I really don't like the taste of it. I've tried several times to use Stevia in coffee, tea, baking, etc.. and I just can't stand the taste!

Btw, why graham crackers? If you're looking for texture, why not add ground Fiber One? Or just grind your nuts to an "almost creamy" consistency.

Stevia is an all natural sweetener (from the stevia plant)......no calorie as well. I use it in all my baking. This is a great way to make it even healthier and of course, all natural.

Yup! I used granulated sugar and it worked fine. It nothing else, it lends a little more grittiness along with the graham cracker crumbs to the texture!

Many homemade peanut butter cups call for powered sugar. You didn't specify so is regular granulated sugar ok?

I made a version of these a few weeks ago as holiday gifts, but I used honey instead of sugar. So delicious!
