Chocolate Covered PB Stuffed Jalapeño

1 large jalapeño pepper
2 tsp natural creamy peanut butter (the kind with no sugar)
1 oz dark chocolate
sea salt
Directions:
1. Rinse and dry the jalapeño, then cut the top off (but don’t throw it away). Use a skinny knife to cut out the pith and the seeds from inside.
2. Place the chocolate in a small bowl and microwave on medium power for 1 minute, checking and stirring the chocolate every 20 seconds, until just melted.
3. Carefully stuff the pepper with peanut butter, then cover both parts of the jalapeño with the melted chocolate and stick them together. Sprinkle with sea salt, place the pepper on a piece of tin foil and refrigerate.
