Nothing screams &#8220;Super Bowl&#8221; like a huge pot of chili. I have made many chili recipes, each one different than the last. This one, however, will be made again without modification. I wouldn&#8217;t normally incorporate peanut butter into my chili but apparently there is a widespread tradition amongst some people to always serve peanut butter with chili, either on the side with crackers or as peanut butter sandwiches, so I thought <i>why not?</i> This is the best chili I have made, but is it because of the peanut butter? Perhaps, but I think it&#8217;s a culmination of all the ingredients I threw in. In fact, my favorite ingredient was the hominy, an ingredient I&#8217;ve never cooked with before. I even got rave reviews from people that aren&#8217;t &#8220;chili people&#8221;. This is perfect for Super Bowl Sunday or any Sunday for that matter. So I added &#8220;chunky pumpkin stew&#8221; to my &#8220;Winter &#8211; To Make&#8221; list on the fridge. No single recipe sounded perfect so I came up with my own. The soup fills the house with some excellent aromas (cinnamon, ginger) and the flavors will not disappoint. I&#8217;ve never seen a Korean Yam until this year so if you can&#8217;t find it in your local grocer, look harder. It&#8217;s purple-skinned, white-fleshed and tastebud-stimulating. And don&#8217;t forget the peanut butter!</p>

Thai food is quickly becoming one of my favorite to cook. It reminds me of Indian cuisine in that it packs a ton of flavor. However, Thai food is much easier to prepare since a wide variety of prepared <a href="http://www.amazon.com/gp/product/B000QU3JM0?ie=UTF8&#038;tag=strandalous-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=B000QU3JM0">Thai curry paste</a> is readily available. Armed with a few basic ingredients, you can have a Thai stir-fry ready in a matter of minutes. This recipe goes one step further to expand a basic stir fry into a flavorful soup. Massaman curry paste, chicken and peanut butter are the newest <i>love triangle</i> in Peanut Butter Boy&#8217;s life.</p>

So I decided to combine my love for <a href="/category/mexican">Mexican cuisine</a> with <a href="/category/peanut-butter">peanut butter</a> and I created a fantastic peanut butter mole that you can make either on the stove or with a slow-cooker. I highly recommend you try this, not just because it&#8217;s a Mexican Peanut Butter Boy fusion (Chico en Cacahuate de Mantequilla) but because how often do you get to eat <b>chocolate and peanut butter for dinner</b>?</p>

It&#8217;s not the prettiest sight to behold but beef stew is just about the perfect winter meal. I mentioned that I had another use for <a href="http://www.peanutbutterboy.com/slow-cooker-roast-beef/">slow cooker roast beef</a> and this is it. As if the meat wasn&#8217;t tender enough after 9 hours of cooking, this recipe calls to shred the beef and soak it in the gravy making it even more juicy and tender. This meal requires very little prep or cook time (other than all-day slow cooking), will feed about a dozen people and freezes wonderfully. And this recipe also makes use of the leanest cut of beef you can get.</p>

I love leftovers, especially during the week when there&#8217;s no time to buy groceries and cook an entire meal, unless you like eating dinner at 10:00pm. I can eat the same thing 4 or 5 nights in a row but not all people have that kind of stamina or dedication (you know who you are). Using leftovers in a creative way is often difficult, unless you enjoy <a href="http://www.peanutbutterboy.com/taco-enchilada-casserole/">lasagna</a> shakes or <a href="http://www.peanutbutterboy.com/chicken-and-broccoli-stir-fry/">chicken and broccoli</a> popsicles. But I gotta hand it to myself &#8211; and I was pretty excited about it &#8211; this is one of the best uses for leftovers I have ever come up with. I mentioned previously that I had an excellent leftover use for the <a href="http://www.peanutbutterboy.com/peanut-butter-sweet-potato-soup/">peanut butter sweet potato soup</a> and here it is, a delicious pasta sauce!</p>
