Jelly donuts are sneaky. If it wasn’t for the pea-sized spot of jelly on the side, you’d never be able to tell the difference between the jelly donut and the gross custard donut sitting next to it in the box. But if you came to my house, you’d find that I’m even sneakier. That donut you see above has been doctored – transforming a delicious donut into a fantastic one. If you haven’t seen the PBJ donut in your local donut shop, it’s because I patented it. But I’m willing to sell the idea, just tell Mr. Dunkin to give me a call, I’ve had my eye on a particular Ferrari for a while now. Read on to see just how delicious this donut is.

I’m glad I’m not a monkey. I could live on bananas, but without peanut butter what’s the point? I have no doubt that a monkey could open a jar of peanut butter but he certainly couldn’t make it. The only option available to the monkey would be to befriend a human. But even if the monkey found a human companion, he would have to deal with an inter-species language barrier and would need to communicate his desire for peanut butter with only “oohs” and “ahhs”. Plus, monkeys eat a lot of bananas which would require a lot of peanut butter and I doubt the human he finds is a millionaire; The human would eventually want compensation – but monkeys don’t have cash or credit, only fleas and feces. No, I don’t want to be a monkey at all. But enjoy my Monkey Sundae.

One aspect about food I enjoy the most is the memories and sense of nostalgia it can induce simply by the look, smell or taste of it. I used to help my mother on her Meals on Wheels route when I was younger, and there was a very kind man who always had a box of chocolate covered jelly rings to share with us. These donut-shaped chocolate rings were filled with a raspberry jelly and that man not only introduced me to them, but I haven’t had them since. Yet I distinctly remember the flavor and texture of them, and how much I looked forward to delivering his meals in the hopes that I would be offered a jelly ring. When my coworker brought in some chocolate covered fruits one day, I bit into a chocolate covered prune and took a step back in time. Somehow, chocolate covered prunes tasted exactly like the jelly rings I remember, and the shape is surprisingly close too. If prunes aren’t appetizing to you, just call them dried plums and you’ll be fine. These are a great snack and excellent source of energy and antioxidants.

Everyone has an Uncle Bob. If not, they have a relative equivalent to my Uncle Bob. For example, my Uncle Bob recently acquired a few live chickens (don’t ask how) and decided to raise them on a diet consisting exclusively of cheeseballs. Needless to say, the egg yolks are suprisingly orange. Another tidbit of information Uncle Bob shared with me is what many of his coworkers have for snack. Here’s what he divulged: They go to the vending machine, get a bag of salted peanuts and a bottle of Coke, pour the peanuts into the Coke and drink it. Simple. Odd. Delicious? Yup. I don’t drink much soda but Coke Zero is my favorite. Regular Coke is too sweet, diet Coke tastes awful, but Coke Zero has the perfect level of sweetness with a good flavor and an almost salty undertone. Salted peanuts compliment it perfectly. I must admit, I was impressed. Thanks Uncle Bob.

Tucked away in upstate New York in a small town called Wevertown, there’s a small bed and breakfast called the Dillon Hill Inn. It’s run by an extraordinarily nice couple – the husband is a builder who built most of the furniture and the wife is an excellent cook. Besides baking some outstanding brownies and phenomenal scones, she introduced me to a new dish – baked grapefruit. Her method was simple: cut the grapefruit in half, spread a little butter on top, a sprinkle of brown sugar and cinnamon, then bake until the sugar caramelizes. Top it off with a bright red cherry and you’ve got a gourmet start to your day. The simplicity astounded me and the taste was incredible. Baking the grapefruit helps minimize the bitterness and also makes scooping out the fruit easier. I can’t see a reason to eat a raw grapefruit anymore.

Ahh, Spring is here – nothing but warm days intermixed with a fair share of rainy ones. But when Mother Nature presents you with these occasional wash-outs, sometimes the best thing to do is to succumb to a book-filled, board-game-loaded, hot-chocolate-drinking kind of day. Homemade hot chocolate always seemed too labor intensive, especially since Swiss Miss brings back fond childhood memories of those cold winter days. But now that I’ve seen how easy it is to make, there is no turning back. Taking it one step further and making a peanut butter hot chocolate was a no-brainer. My trick here is to use nonfat powdered milk to make the hot chocolate super rich and creamy without increasing the fat.

Chocolate is a staple in my diet. Every morning I start the day off right with a helping of dark chocolate to accompany my coffee. Truffles aren’t generally my thing, I prefer a plain piece of the good stuff (70-90% cocoa). However, these truffles are different. There’s no butter, no refined sugar and they are very low in saturated fat. I first made these out in California and they came out a bit dry. A few minor tweeks and these truffles were just as decadent as the regular ones! These truffles don’t require melted chocolate, only cocoa powder which is a nutrition powerhouse with only 11g of fat per cup along with 26g fiber, 16g protein and an extraordinary amount of antioxidants. These truffles are an essential part of any diet and a completely guiltless dessert. These are a great gift and perfect for a potluck!

This idea, one of the most ingenious and simplest of ideas, was not my own. At least not entirely. In recent years, it’s been a habit of mine to keep a barrel of peanut butter filled pretzels in the back seat of my car – you never know when you’re going to get hungry. And now that I’ve joined the real world and began working, I keep a barrel in my desk drawer. I introduced a coworker to them and got him addicted. Shortly after, he shows up with a bag full of homemade chocolate covered goodies that look suspiciously like my pretzels. They were. And boy are they good. I shnazzied them up a little by adding a pinch of sea salt but raw sugar would be great too. These pillow-shaped treats beg you to dive headfirst into the barrel and take a nap!
