<p>The theme for this round is <b>Fruits and Veggies</b>. Summer is near and nothing accompanies it better than fresh produce. And I say nothing accompanies produce better than peanut butter. So we want to know the most imaginative <i>fruit</i> or <i>veggie</i> combination for peanut butter you can come up with. This is a wide open theme so get creative, just make sure you get some fruits or veggies in there! To get you started, you might consider going with a modern take on a classic: <a href="http://www.peanutbutterboy.com/ultimate-double-decker-peanut-butter-sandwich/">Double Decker Peanut Butter Sandwich</a> or a twist on a Southern treat: <a href="http://www.peanutbutterboy.com/southern-style-banana-pudding/">Peanut Butter Banana Pudding</a> or a unique, savory soup: <a href="http://www.peanutbutterboy.com/peanut-butter-chicken-vegetable-soup/">Peanut Butter Chicken Vegetable Soup</a>. Think of it as a Mad Lib, simply fill in the blank: &#8220;Peanut Butter and ______&#8221;. <p>The Peanut Butter Boy is getting old. Precisely 1 month from today I will be a quarter-century old. And with July 4th right around the corner, it&#8217;s the perfect time for a summer celebration, and there&#8217;s only one way to do so: with peanut butter! Therefore, the theme for this round of the Peanut Butter Exhibition is <b>Celebration</b> &#8211; any recipe fit for a celebration using peanut butter. This is a wide open theme so get creative, a lot of emphasis this round will be the presentation. Pardon the delay but this contest was difficult to judge. We had a total of <b>37 entries</b>, a new <a href="http://www.peanutbutterboy.com/category/PBE">PBE</a> record! (side note, &#8220;PBE&#8221; is now a recognized acronym at <a href="http://acronyms.thefreedictionary.com/PBE">TheFreeDictionary</a>) Myself and the other judges: <a href="http://zestycook.com">Cory</a>, <a href="http://philabundanceoflife.wordpress.com/">Lee</a> and <a href="http://www.fakefoodfree.com">Lori</a> all had different top choices causing recounts, sudden-death voting and peanut butter fights (I won). But we did it. Kinda. There were 4 entries tied for 3rd place so we held a tiebreaker &#8211; in the end I decided to leave it as is and bestow the title upon them all. I wish there were prizes for all the contestants but I&#8217;m made of peanut butter, not money. Lest we forget the real prizes here, the recipes! Care to see them? <p>This recipe is very adaptable. Choose a spicier curry paste if you like and any sort of chutney would be wonderful. Endive can be a bit pricey so this would be great in a tortilla or rice paper wrapper too. And maybe try a crunchy peanut butter instead of the chopped peanuts. Experiment! This recipe made more than enough for two main courses but it would also be nice served as an appetizer.</p>
