Nothing screams “Super Bowl” like a huge pot of chili. I have made many chili recipes, each one different than the last. This one, however, will be made again without modification. I wouldn’t normally incorporate peanut butter into my chili but apparently there is a widespread tradition amongst some people to always serve peanut butter with chili, either on the side with crackers or as peanut butter sandwiches, so I thought why not? This is the best chili I have made, but is it because of the peanut butter? Perhaps, but I think it’s a culmination of all the ingredients I threw in. In fact, my favorite ingredient was the hominy, an ingredient I’ve never cooked with before. I even got rave reviews from people that aren’t “chili people”. This is perfect for Super Bowl Sunday or any Sunday for that matter. Read on for more great Super Bowl recipes…

Individually, dark chocolate and peanut butter are two of my favorite foods. But when these powerhouses combine forces, you’ve got a rich, creamy and gourmet spread that is unlike anything else. However, a few words of wisdom: It does not work with everything. A toasted chocolate peanut butter and banana sandwich? Incredible. But, a simple peanut butter and jelly sandwich may or may not hit the taste buds correctly, it all depends on the jelly. For example, dark cherry preserves will complement fabulously while a grape jelly will clash. Second word of wisdom: Keep spoons away from the jar. This peanut butter is extra creamy and extra delicious, resistance is futile. Hungry yet?

To quote our new favorite show: “Winter is Coming”. A batch of this stew, which freezes wonderfully, will help you prepare for the coming cold months. I use pumpkin puree in many recipes, but I never use fresh pumpkin. So I added “chunky pumpkin stew” to my “Winter – To Make” list on the fridge. No single recipe sounded perfect so I came up with my own. The soup fills the house with some excellent aromas (cinnamon, ginger) and the flavors will not disappoint. I’ve never seen a Korean Yam until this year so if you can’t find it in your local grocer, look harder. It’s purple-skinned, white-fleshed and tastebud-stimulating. And don’t forget the peanut butter!

I don’t know why I made this. The combination of ingredients is strange, the name isn’t particularly appetizing (it was originally called braised bulgur and cabbage) and it doesn’t look all that good, but I had all the ingredients so it was too easy to pass up. Did you ever make a recipe you were skeptical about but it wound up being way better than expected? We served this with leftover Chicken Chana Saag (chicken and chickpeas in a spinach and garlic sauce), which is one of our favorite Indian dishes, and expected this odd recipe to simply be filler to round out the meal. We were so wrong. I couldn’t stop eating it and finished it all before I even touched the Saag. There were crazy flavors going on that I can’t fully describe – there was sweetness, saltiness, and something else that was just plain delicious. This taught me to never judge a recipe by its recipe.

Fetch your weapon of choice (spatula) and don your backwards cape (apron) because grilling season is upon us! Everything tastes better grilled just like everything tastes better with peanut butter. Combine those two facts and voila, you’ve got this recipe. This was a last-minute idea that turned out better than expected. If you’ve never had a tuna burger before, don’t worry, you’ll love it. And you’ll never look at those tuna steaks in the freezer the same way again! Note: homemade peanut sauce is much better than store-bought unless time is a factor (it was for us).

Sorry for the infrequent updates, I’ve been busy getting “spun up” at my new job, eating lots of peanut butter (as usual), and planning a last-minute trip to Italy. I’m headed to Florence tomorrow for 4 days with my mom and sister. Similar to my trip to Ireland, I will be heavily researching the Italian culture (food) – in particular, the peanut butter supply and availability. Since Nutella is very popular there, I’m hoping to find plenty of peanut butter! Either way, I’m excited for the trip and plan to report my findings when I return! In the meantime, enjoy a Thai-influenced marinade that is fantastic with pork or probably any other meat you can get your hands on.

Every fitness buff has their own way of working out, and what works for one person may not work for another. But there is one commonality amongst fitness aficionados: nutritional beverages. This ranges from the standard shakes and smoothies to more aptly named milkshakes and ice cream. Any one of those will satisfy your hunger while delivering a dense concentration of nutrients. I often see people (weight lifters especially) become so routine with their beverages but I try to change it up every time. This shake is one of my favorites. You might not have the required ingredients on hand but I suggest you get them!

I like to cook, but sometimes I enjoy letting technology cook for me. Along those lines, this is one of the laziest recipes I could think of. It uses only 5 ingredients and requires virtually zero effort, but the results will impress you. However, like all great things, it takes time (to cook). This is a meat and potatoes dish I proudly stand behind. The sauce is thick, rich and delicious and works wonderfully on top of a baked potato. If you’re wondering about the name – “Top Round” is the the cut of steak and “Russian” reflects the likeness of the sauce to Russian dressing (although this sauce is way better). Mmmm…..saucy.

Have you ever had mole sauce? It’s a dark, rich sauce commonly used in Mexican cooking. While there are many variations, you’d surely remember if you saw or tasted it because it usually contains chocolate. Traditional Mexican mole varies from place to place, containing anywhere from 10 to 40 ingredients. I discovered that some recipes even call for crushed peanuts. So I decided to combine my love for Mexican cuisine with peanut butter and I created a fantastic peanut butter mole that you can make either on the stove or with a slow-cooker. I highly recommend you try this, not just because it’s a Mexican Peanut Butter Boy fusion (Chico en Cacahuate de Mantequilla) but because how often do you get to eat chocolate and peanut butter for dinner?
