Tucked away in upstate New York in a small town called Wevertown, there’s a small bed and breakfast called the Dillon Hill Inn. It’s run by an extraordinarily nice couple – the husband is a builder who built most of the furniture and the wife is an excellent cook. Besides baking some outstanding brownies and phenomenal scones, she introduced me to a new dish – baked grapefruit. Her method was simple: cut the grapefruit in half, spread a little butter on top, a sprinkle of brown sugar and cinnamon, then bake until the sugar caramelizes. Top it off with a bright red cherry and you’ve got a gourmet start to your day. The simplicity astounded me and the taste was incredible. Baking the grapefruit helps minimize the bitterness and also makes scooping out the fruit easier. I can’t see a reason to eat a raw grapefruit anymore.

Just imagine the first bite of a piece of french toast hot off the griddle – the crispy, chewy texture of the bread complemented by some sweet maple syrup and powdered sugar. Now, imagine the (pleasant) slap in the face when you discover creamy and crunchy peanut butter along with warm, cooked bananas stuffed inside this succulent creation. To finish, a slight tang from the rum-laced batter to round out the taste. Once you’ve had the pleasure of peanut butter stuffed french toast, you won’t be making regular french toast ever again.

In my opinion portable breakfasts are the holy grail of baking. I’m always looking for an energy-packed on-the-go breakfast, with plenty of healthy fats, whole grains and protein to tide me over until lunch. Dark Chocolate Peanut Butter Banana Bread was the first contender for the ultimate portable breakfast but these scones are a serious contender. I tested them out on the girlfriend and she approves. This recipe is at least the third remake: I found it on Bon Appegeek where it was adapted from Baking Bites. And yes, the dough looks and tastes like chocolate chip cookie dough and I was very tempted to eat it all raw.

* Updated from the archives

Pumpkin season is in full swing, or at least it would be if not for the shortages. So hunt down and stock up on canned pumpkin if you can find it. It may be a bit too cold for Pumpkin Pie Ice Cream so here’s a warm, satisfying bowl of pumpkin oatmeal instead. Compared to oatmeal made with just milk or water, pumpkin puree adds a wonderful creamy texture and subtle earthy flavor. This recipe is a tasty way to get your whole grains, healthy fats, dairy. fruit and vegetables into your breakfast. Elisabeth gave a wide-eyed look of satisfaction after one bite and I was amazed at how good this turned out. This is quite possibly the Peanut Butter Boy’s new favorite breakfast and perfect for the morning after Thanksgiving.

I’ve officially moved back to the east coast, Hoboken to be exact. Located directly across the Hudson river from Manhattan, Hoboken is the home of baseball and birthplace of Frank Sinatra. It’s nicknamed the “mile square city” because, well, it’s only about 1 square mile in size. But don’t let the size fool you, it’s the 4th most densely populated city in the United States. I’ve lived in Hoboken for 5+ years now and I love this town. There are so many good restaurants here and there just aren’t enough meals in the day. If you’ve spent any amount of time in New Jersey you may have noticed that come breakfast time, the deli’s and bagel shops are packed. The odd part is that everyone orders the same thing – taylor ham, egg and cheese – on a bagel or a roll. If you’re unclear as to exactly what taylor ham is, it’s ok, nobody knows. Taylor ham, also called pork roll, is a terribly delicious log of ham that is sliced thick, grilled, and placed atop the egg and cheese. The resulting creation is unbelievably satisfying and can cure the roughest of evenings. Now that I’m back, I felt it necessary to make my own healthier, peanut buttery version of the classic Jersey breakfast.
