It’s so simple and delicious that it deserves the Pulitzer Prize and at least one Grammy. This recipe is further proof that Express Eats don’t sacrifice on creativity or flavor.

It’s official – this collection of 1 minute recipes is now called Express Eats. Welcome to the third installment. I can’t take full credit for this one since a buddy suggested I try peanut butter and granola on banana slices. I took the idea and ran with it! This is pretty straightforward (I guess all of the Express Eats are) but I’ve never thought of it before. It’s a perfect snack for kids and you can get really creative with it. To be honest, I had almost as much fun making it as I did eating it. That’s a lie, it was like 4 different parties in my mouth. Got an Express Eats idea? Send me some suggestions!

Hey everyone – long time, no eats! It’s been a while since my last recipe but you’re all in for a treat. I’m developing a new recipe series called Express Eats that are designed to take literally 1 minute or less. The idea is based on the fact that not everyone has the time (or desire) to make a fancy 3-course dinner or a rockin’ bowl of oatmeal every morning. So I’ve come up with a few super quick recipes to add a little spice to your day. This can be anything from a quick and innovative snack to a twist on an morning staple (like this coffee recipe). But I need some feedback. What do you think – is this series a good idea or not? And do you like the title “Express Eats” or can you think of something better? Other names I was contemplating: 60-Second Eats, Minute to Make it, Done in 60 Seconds. Suggestions?

I’m not very adventurous when it comes to trying new foods. I’ll eat almost anything (except artichokes) in a restaurant, and the more exotic the better. But I never buy foods that I’m unfamiliar with because I never know what to do with them. Rhubarb is one of those foods. We bought frozen rhubarb to make a strawberry-rhubarb pastry but the extra rhubarb just sat in the freezer, until I found a recipe for rhubarb porridge that piqued my interest. My Aunt Beth recently gave me a fantastic gift that I’ve never seen before, Tierra Farm Maple Pecan Butter. I’m not sure why she gave it to me, probably because I’m a kickass nephew, but it’s absolutely delicious. And wouldn’t you know, it goes perfect in this oatmeal, or as I like to call it: Bowl Pie.

Every fitness buff has their own way of working out, and what works for one person may not work for another. But there is one commonality amongst fitness aficionados: nutritional beverages. This ranges from the standard shakes and smoothies to more aptly named milkshakes and ice cream. Any one of those will satisfy your hunger while delivering a dense concentration of nutrients. I often see people (weight lifters especially) become so routine with their beverages but I try to change it up every time. This shake is one of my favorites. You might not have the required ingredients on hand but I suggest you get them!

This past St. Patrick’s was an eye opener. Despite being mostly Irish (37.5%), I’ve never had Irish Soda Bread before. So when my friend brought over a fresh homemade loaf, I was in Irish heaven (or is that just a never-ending bar?). The crusty yet tender bread, the sweet raisins…the first thing I wondered was how peanut butter would taste on it. It was delicious. The second thing I wondered was how peanut butter would taste IN it. After some recipe sleuthing and combining, I devised my own recipe to infuse this beloved paste into a principal food of my ancestors. I don’t fashion myself as a baker, but this came out perfect the first time despite the modifications I made. St. Patrick’s may have passed but don’t wait until next St. Patrick’s day to make it.

The most important question on a Sunday morning is: pancakes or crepes? Neither answer is wrong yet both choices have their merits. For today, I’m going to recommend crepes. Should you disagree, then please refer to the World’s Best Pancake recipe instead. These crepes require very few ingredients and are very easy to make. If you don’t have the listed flours, then all-purpose flour or whole wheat pastry flour (my favorite) will work fine. Don’t forget the peanut butter! What do you prefer: Pancakes or Crepes?

Sometimes the order in which you do things can make or break a situation, like when putting on your clothes or disconnecting a car battery. While you won’t look like a fool or get electrocuted if you get the order wrong, making this parfait falls under that category. Sure, you can mix your favorite granola into a bowl of yogurt but you can’t call it a parfait. Similar to Peanut Butter Cereal, eating this is an experience akin to digging for gold, or in this case, liquid nuts.
