Every child likes to eat snow. And who can blame them? The only reason, as adults, that we don’t eat snow is we don’t want the neighbors to see. Well that’s about to change. You’ve probably seen these cookies before since they assume several identities – Mexican Wedding Cookies, Princess Tea Cakes, Honey Sandballs – but no matter what you call them, these are perfect for wintertime. Many people will tell you that these cookies can’t be made without butter – they’re wrong. While the flavor or consistency may be slightly different, this heart-healthy version is just as delicious. However, while healthier, these cookies are still high in calories, so if you’re watching your intake, you may want to stick with real snow.

Apple picking – a common fall activity enjoyed by thousands of people ever year. Yet somehow, for the past 5 years we’ve tried and failed to apple pick. Apple picking is the type of party you don’t want to be fashionably late to, yet we always were – and there were never any apples left. But this year we did it! A successful 26-lb haul of fresh picked apples. We tried to remember all the varieties we picked but couldn’t, there were just too many! Enjoy my first apple crisp ever – naturally a peanut butter one!

This past St. Patrick’s was an eye opener. Despite being mostly Irish (37.5%), I’ve never had Irish Soda Bread before. So when my friend brought over a fresh homemade loaf, I was in Irish heaven (or is that just a never-ending bar?). The crusty yet tender bread, the sweet raisins…the first thing I wondered was how peanut butter would taste on it. It was delicious. The second thing I wondered was how peanut butter would taste IN it. After some recipe sleuthing and combining, I devised my own recipe to infuse this beloved paste into a principal food of my ancestors. I don’t fashion myself as a baker, but this came out perfect the first time despite the modifications I made. St. Patrick’s may have passed but don’t wait until next St. Patrick’s day to make it.

Today is my last day working for PM Radars. During my time there, my boss (the Chief) made several announcements to the entire group to inform them that I was the Peanut Butter Boy. Needless to say, very few people knew my real name. In honor of my coworkers, counterparts and the program, I’ve developed “The PM Brownie” – the “P” stands for peanut butter, the “M” stands for mocha. They are so easy that Chief, even you could make them. If only you guys hadn’t moved to Maryland, you’d be eating them as you read this. Switching jobs is always tough – these brownies will help.

This is 2 cookie posts in a row – it must be cookie season? If you still need (or want) another cookie for Christmas then look no further, these cookies are super simple and delicious. They are essentially the same as the Flourless Peanut Butter Cookies except half of the sugar is replaced with rolled oats, yet somehow they don’t taste less sweet. Each large cookie is equivalent to eating 1T peanut butter, 1/2T oats, 1/2T brown sugar – not too bad. If Santa sticks to these, he may even shed a few pounds this season!
Next up is a treat worthy of it’s title. This cake requires very few ingredients yet, of course, stars my favorite one. In fact, I never would have thought that just these ingredients would make a cake but according to Amber and her recipe from Almost Vegan, it does. This is a dense and rich cake full of whole-grain goodness and as a bonus, happens to be vegan. I imagine this is very similar to a dense Banana Bread minus the bananas and would make an outstanding breakfast to-go. I plan to make and share a maple version of this recipe shortly.

In my opinion portable breakfasts are the holy grail of baking. I’m always looking for an energy-packed on-the-go breakfast, with plenty of healthy fats, whole grains and protein to tide me over until lunch. Dark Chocolate Peanut Butter Banana Bread was the first contender for the ultimate portable breakfast but these scones are a serious contender. I tested them out on the girlfriend and she approves. This recipe is at least the third remake: I found it on Bon Appegeek where it was adapted from Baking Bites. And yes, the dough looks and tastes like chocolate chip cookie dough and I was very tempted to eat it all raw.

Homemade bread is one of life’s simple pleasures. The enticing aroma while it’s baking, the unbeatable warmth of a fresh loaf, and the way butter (or peanut butter) melts on a warm slice. Let’s keep it simple – no need for yeast, dough starters or bread machines. This is one of the easiest and cheapest breads you can make and also my personal favorite. I recommend using a medium beer (such as Yuengling) but you won’t be able to taste it much in the end product anyways. The edges of this bread turn out so crispy that you’ll need to bite carefully so you don’t puncture the roof of your mouth. This basic recipe begs for add-ins, check out some suggestions. Shortly I’ll be sharing my new favorite use for this bread…
