I’ve paired peanut butter with some pretty strange things that turned out to be awesome. Such recipes include Peanut Butter with Eggs, Peanut Butter and Tomatoes and of course, Peanut Butter and Buffalo Wing Sauce. Along those lines, I bring you another seemingly-odd combination for the latest Express Eats installation, Peanut Butter and (cold) Cheese. This one was suggested by a reader, and while I was skeptical at first, one bite had me pleasantly surprised. This is a perfect protein-loaded midday snack or appetizer for a formal gathering (sure to start conversation). Be sure to pair the cheese and peanut butter so neither one is stronger in flavor than the other. If you really want to get fancy, sprinkle some sea salt or crumbled bacon on top.

It is November, which means it’s National Peanut Butter Lover’s Month! I have been a bad Peanut Butter Boy for not mentioning this sooner, but did you know that this national holiday mandates that you consume at least 1 serving of peanut butter every day for the entire month of November? Unfortunately (fortunately?), this recipe does not contain peanut butter. But, I promise you that next week I will give you a fanastic Thanksgiving peanut butter dessert. This dessert will not only astound your senses, but it will replace a common Thanksgiving dessert with a much healthier and, dare I say, tastier version. For now, please enjoy this simple and delicious appetizer/entree. Be sure to serve it with a cold beer.

Have you had enough of peanut butter and chocolate? Me neither. While the chocolate is optional, the peanut butter is not. Perhaps this is a little late, but nothing brings in the fall like the end of fig season! If you can still find fresh figs at the store or if by any chance your fig tree is still bearing fruit, you must give these a try. You can use a “regular” peanut butter or try a natural peanut butter with no sugar (and with salt) for a salty/sweet treat.

Shout if you have a Vita-Mix blender! I got one for my birthday this year and love it. It whips up fresh ice cream in no time and like a dog, it can clean itself! As for this soup, if you haven’t heard me rant about it before, I love orange-colored soups. This one in particular is, as one reader put it, “like liquid gold.” Whether the soup is made from pumpkin, butternut squash, sweet potato, peanut butter, carrots, cantaloupe, oranges or any combination of those orange-colored delights, it is guaranteed delicious. And when your blender can process and cook your orange soup in one step, well, that is just bliss. This soup is very rich and full of flavor – so much so that your tongue may get confused with all the concurrent flavors. But stick it out, each sip is better. And freeze your leftovers, this soup doubles as an excellent pasta sauce.

Homemade cheese never appealed to me. Curdling the milk, straining with cheesecloth and numerous other steps seemed messy and time consuming. I’ve looked into several varieties – yogurt cheese seems easy to make but a bit expensive overall. Then I found quark. Quark is a European fresh soft cheese with a mild flavor and similar in texture to whipped butter or ricotta cheese. It’s actually the most popular cheese in Germany and there are a million uses for it, from pancakes to cheesecakes and souffles. In addition, it’s naturally low in fat with only 0.2g fat per serving. It’s difficult to find prepared quark in stores, but it takes very little work to make and costs less than $2 per batch. It’s a wonderful cheese, give it a try, you won’t be disappointed.
