Almond-Crusted Pork with Peanut Sauce

Pork Medallions
1 pound pork tenderloin, trimmed and cut diagonally into 1/2-inch thick slices
1 cup whole wheat breadcrumbs (or 3 slices whole wheat sandwich bread)
1 large egg white (or 2T egg substitute), beaten
1/2 cup almonds
1t garlic powder
1/2t kosher salt
1/4t ground pepper
Peanut Sauce
See recipe for Peanut Dipping Sauce or Fast Peanut Sauce – both are excellent.
Directions:
1. Preheat oven to 425°F. Line a baking sheet with tin foil and coat it with cooking spray.
2. If you are making your own bread crumbs, tear the 3 slices of bread into a food processor and pulse until broken into small crumbs. Place on the baking sheet and bake for 5-10 minutes, until browned. Then place breadcrumbs, almonds, garlic powder, salt and pepper in the food processor and pulse until the almonds are coarsely chopped. Transfer the mixture to a shallow dish.
3. Place egg white in another shallow dish. Dip both sides of each pork slice in egg , then dip and coat into the almond mixture, then place the pork on the baking sheet. Bake until golden brown, about 16 to 18 minutes.
